It ends up first removing J, then Q, then Z, then X, and so on. For a given set of starting letters, you can then find the highest-scoring center-letter by just trying each letter in the center and seeing the score. I did it by writing a scoring function that could take in more than 7 starting letters. I put the answer in spoilers, it may be a fun thing to think over yourself first! I did, and wrote a tiny script to search through different combinations of letters to find a set with a really high score.
